Inulin, a dietary fibre extracted from chicory root. EU certified, and at eighty-nine grams of fibre per hundred it is very nearly all fibre.

A fine powder that stirs into a drink, a yoghurt or a batter without changing the flavour. It is also used commercially in cereal bars, baked goods and dairy.

Introduce it slowly. The usual guidance is to start at no more than a teaspoon a day for a fortnight, build up gradually, and not to exceed three teaspoons a day.
