Erythritol, the sugar alcohol used as a sugar replacement. It carries no calories and no sugar, and unlike stevia it leaves no bitter finish. Roughly seventy per cent as sweet as sugar, so a like-for-like swap tastes slightly under-sweetened.

Use it wherever sugar is stirred in rather than baked with structure — coffee and tea, yoghurt, fruit, custards, cold desserts.
