Agrimontana Wild Cherry Extra Jam 350g

Wild cherries at 107 g of fruit for every 100 g of jam, with cane sugar and lemon juice. More fruit goes in than comes out: water boils off during cooking, so the finished weight is less than what was put in the pan. Made without added pectin.

On toast at breakfast, folded into a tart or stirred through yoghurt. It also belongs on a cheeseboard, where the fruit cuts through something aged and salty.

Agrimontana have worked at Borgo San Dalmazzo, at the foot of the Piedmontese Alps, since 1972. They were among the first Italian houses to give up sulphites, and work without colourings, preservatives or synthetic additives.

“Extra jam” is a reserved description in UK law rather than a marketing word: it may only be used when the fruit content clears a legal minimum. These sit well above it.
