Almond flour: what it is and how to bake with it
Almond flour from our own brand: what the label says, the allergens, and how to use it in cakes, biscuits and macarons.
Almond flour is almonds ground to a fine flour; ours is made from blanched almonds, with the skins removed. We sell it under Buy Trusted Food, our own brand, in 1 kg and 500 g bags, and the label lists one ingredient: ground blanched almond flour. Bakers use it for macarons, frangipane and almond cakes.
Allergens: contains almonds (nuts). The label also says it may contain traces of sesame seeds and derived products.
What does the label say?
- Ingredients: 100% ground blanched almond flour.
- Gluten free, GMO free, suitable for vegetarians and vegans.
- Per 100 g: 653 kcal, 52.5 g fat (of which 3.95 g saturates), 18.7 g carbohydrate (of which 4.63 g sugars), 9.9 g fibre, 23.4 g protein, 0.05 g salt.
- Storage: in a cool, dry place away from sunlight.
How do you bake with it?
The label suggests using it one for one in place of wheat flour. It contains no gluten, so it suits cakes, biscuits, pastry and crumbles better than yeasted bread, where gluten does the work of holding the dough together. Recipes written for almond flour usually use eggs to bind it.
Some ideas:
- Macarons and amaretti, where almond flour is the base of the recipe.
- Frangipane for a tart, with butter, sugar and eggs.
- A moist almond cake, in place of part or all of the flour.
- A crumble topping, mixed with butter and a little sugar.
For another gluten-free flour, see our coconut flour. If you are also cutting sugar, our guide to erythritol covers the granulated and powdered forms.
Who makes it?
Buy Trusted Food is Crema Aroma's own brand, sold in the UK only by Crema Aroma. The almond flour is imported and packed for us in Livingston, Scotland.
