Organic coconut flour, made from dried and ground coconut flesh. Naturally free of gluten, and at thirty-one grams of fibre per hundred it is far more absorbent than wheat flour.

It drinks liquid, so it does not substitute one for one: a rule of thumb is a quarter to a third of the wheat flour by weight, with extra egg or liquid to compensate. Works in cookies, pancakes, bread and pizza bases, sweet or savoury.
