Description
Vergnano's new single-origin range comes in three bags, and this is the kilo. Every bean in it is Brazilian, from the Alta Mogiana region, grown at 800 to 1,200 metres and semi-washed. The label calls it full bodied and nutty: cocoa and nuts on the first sip, then toasted cereals and fresh bread, and a long, sweet finish that recalls brown sugar.
How to use it
With a body of 7 out of 10 it is the heaviest of the three, which makes it the one to try in a cappuccino or a flat white. As espresso, start at 18 g in a double basket and adjust the grind until the shot runs evenly. In a moka pot the cocoa comes forward; take the pot off the heat as soon as the coffee turns pale.
Additional information
Slow roasted in Italy to a medium roast by Caffè Vergnano, the family roaster near Turin that has made coffee since 1882. It comes from one origin, so there is no blend to balance. The bag is one of three illustrated stamps in the range, this one a macaw over coffee hills. One kilogram of whole bean. Keep the bag sealed, cool and away from daylight, and once it is open use it within a month.
