Description
The gentlest of the Riserva Torino line and the one to reach for if espresso usually arrives too fierce. Vergnano keep the roast short here so the bean’s own sweetness survives it, which makes this the blend that suits a household where not everyone drinks it black.
How to use it
Ground for espresso it pulls a light, aromatic shot that stays polite under milk rather than fighting it. It also takes well to a moka pot, where the longer contact draws out more body than the espresso basket does. Start at 18 g in a double basket and coarsen if the shot runs thin.
Additional information
Roasted in Santena, just outside Turin, by a family that has made coffee since 1882. The roastery is deliberately slow about it — cycles of fifteen to eighteen minutes at 180–200°C rather than an industrial turbo roast — and each origin goes through the drum on its own, blended only afterwards so each keeps its own character. One kilogram of whole bean. Keep the bag sealed, cool and away from daylight; once open, use within a month while the crema still holds.
