Description
The Riserva Torino built for crema rather than delicacy. Slow roasting and a Robusta share give it the dense, persistent head that Italian bars are judged on, and enough weight to carry a cappuccino without disappearing into the milk.
How to use it
This is an espresso blend first. In a pressurised or standard basket it gives a thick, slow pour and a crema that survives the walk to the table. In a moka pot go slightly coarser and lift it off the heat early, or the higher body turns heavy. Not the blend for filter.
Additional information
Roasted in Santena, just outside Turin, by a family that has made coffee since 1882. The roastery is deliberately slow about it — cycles of fifteen to eighteen minutes at 180–200°C rather than an industrial turbo roast — and each origin goes through the drum on its own, blended only afterwards so each keeps its own character. One kilogram of whole bean. Keep the bag sealed, cool and away from daylight; once open, use within a month while the crema still holds.
