Gentile Preserves - Ready Sauce with Montoro Onions 980g

Sixty per cent Montoro onion, slow-cooked with Italian pork and beef at fifteen per cent each, white wine and Ravece extra virgin olive oil. The onion is the body of the sauce; the meat is the seasoning, which is the reverse of a conventional ragù. The oil in the jar is Ravece, a bitter, herbaceous cultivar from Irpinia that is usually bottled on its own rather than spent on a preserve.

Enough for a family pot of pasta, a lasagne or a tray of polenta. It is rich, so it wants a plain shape and no extra fat.

Gentile have worked at Gragnano, in the hills behind the bay of Naples, since 1876. The preserves come from the same house as the pasta and from the same part of Campania.
